Turkish Mutton Ouzi Rice with Indian spices(In my Way).
Ouzi is a wors for a dish of baked lamb and spiced rice. It is a traditional Middle Eastern Recipe,widely enjoyed(tried my own way).
A blend of spices including whole masala gives the recipe a delicious taste,aroma and makes it a favourite. This ouzi recipe is a Mutton and Rice pilaf served in a pot/plate covered with pastry sheet/ bread dough and baked/ finished in the oven.

- 2 inch ginger
- 10 garlic cloves
- 1 1/2 tbsp fennel seeds
- 2 tbsp coriander seeds

- 3 bay leaves
- 3 green chillies
- 1 kg mutton chops

- 1 tbsp olive oil
- Water for kneading
- 1 potato
- 1 tsp maida
- 1 tsp cornflour
- 1/2 tsp chilli flakes
- 1/2 tsp mix herbs
- Pinch turmeric
- To taste salt
- 1/2 tsp oil
- 1/2 carrot
- 1 small tomato
- 1/2 capsicum
- 1/2 cup boiled chickpeas
- 3 boiled eggs
- 1 green chilli
- 2 tbsp oil
- 2 green cardamom
- 1 cinnamon
- 1 star anise
- 1 mace
- 5 cloves
- 1 tsp black pepper
- 1 onion
- 1 tbsp ginger garlic paste
- 1 tsp ghee
- 2 glass stock+2 glass water
- To taste salt
- 1 tsp vinegar
- 1/2 tsp rose water
- 1 green chilli
- 1 tbsp oil
- 1 onion
- 1 tbsp ginger garlic paste
- 2 tbsp tomato paste
- 1 tbsp garam masala
- 1 tbsp meat masala
- 2 tbsp curd
- Some fried onions
- 1 tbsp chopped coriander leaves
- as required Some fried almonds
- as required Some chopped almonds
- as required Some black raisins
- as required Some chilli flakes
- as required Some cardamom powder
- 1 egg+
- 1 tsp butter
- as required Some black+white sesame seeds
Instructions to make to make Turkish Mutton Ouzi Rice(chops)
- Add starting 14 ingredients to the pressure cooker (till water) and let the mutton dip in water.
- Add salt to taste and cook till 3 whistles or till done. Soak 2 glass of rice for about 45 mins to 1 hour.
- Take 1 1/2 cup maida, salt to taste, sugar, yeast, herbs, oil mix everything well and then add water and knead.(this dough is for covering top) add oil and cover and keep till doubles.
- Take a potato wash thoroughly and scrub the skin and cut into 8 pieces add salt and water and boil for 2 mins. No need to cook just boil for 2 mins.
- Strain and in a plate take maida, cornflour,chilli flakes,herbs,turmeric and salt and mix well. Coat the potato with little oil and coat the powder masala to it.
- Mix well and then keep in freezer for half an hour and then deep fry till golden and crisp.
- Now the mutton is done. Separate the chops from the stock and keep aside. Strain the stock and save it.(in this we are going to cook the rice.)
- Take a pot add oil and then chopped onion and then ginger garlic paste. Saute well. Add ghee and add strained rice and coat well. Add 2 glass of stock and 2 glass water.(double amount of rice). Dear stock is saved for making soup. When the water boils adjust salt, add vinegar, rose water and green chilli and cook on sim till done.
- Cut carrot into juliennes, tomato, capsicum, chickpeas, eggs, chillies. Fry carrots and add to the rice and chopped coriander and mix well.(keep some carrots for garnishing). Dish out the rice to a baking plate.
- For the mutton chops masala, add oil to a pot and then add onions, ginger garlic paste saute and add the tomato paste.
- Add garam masala, meat masala and curd and saute well.
- Cook till oils comes out and add the chops and coat well in masala.
- Assemble the chops on rice, the toppings,eggs,chickpeas,tomato,capsicum,nuts, fried onions, coriander,chilli flakes,raisins.
- Now the dough has doubled. Knead it and roll it little bigger than the diameter of the plate.
- Place a rolling pin in between and fold one side on to the rolling pin and carefully lift the rolled dough and place on the plate.
- Wet hands and seal the sides to the plate. Brush egg+butter mix and sprinkle sesames seeds.
- Bake in preheated oven for 20-25 mins and when the top is brown take it out and brush with some butter. Serve as it is on to the dining table and in front of your guest cut the side and open.
