  10. 2-3 tsp ghee

  12. For sambhar
  13. 1 cup split pigeon peas
  14. 1/2 cup Water
  15. 1 tbsp For masala oil
  16. 1/2 tsp Fenugreek seeds
  17. 1 tbs Cumin seeds
  18. 1 tbs Coriander seeda
  19. 2 Cloves
  20. 1 Cardamom
  21. 1 tbsp Ginger garlic paste
  22. 2 tbsp Coconut
  23. as needed Curry leaves
  24. 2 tsp Red chilli
  25. 1/2 tsp Turmeric powder
  26. 1 large Onion
  27. as per taste Salt
  28. 2 tbs Oil
  29. 1 each Tomato, brinjal, drum sticks, potato. Veggies like As your wish
  30. 1 tbsp Gud / jaggery
  31. 2-3 tbs Tamarind
  32. 1 tsp For tadka Mustard seed
  33. a pinch Asafoetida
  34. 5 to 6 Curry leaves

Instructions to make to make Kanjipuram idli sambhar

  1. Soak rice for 7-8 hours. Than grind coarsely.
  2. Soak daal for a hour. Take a pan add oil & all masalas & saute in low flame till it released smell of masala.switch off the flame. When it cools grind with little water & make smooth paste.
  3. Soak black gram lentils daal & fenugreek seeds for 7-8 hours. Than grind with the curd.
  4. Mix the both batter.Add ginger paste, salt, green chilli paste, Asafoetida, ghee, baking soda & mix well. Batter consistency should be thick. Pour batter in idli mould and steam untill it's steamed.
  5. Take cooker put 2 tbsp oil. Put veggies, salt & saute for 2 min. Add masala paste, & daal.add 4 cup water. Boil the mixture. Cover the lid & blow 5 whistle in high flame then cook in low flame for 15 min. Switch off the flame.
  6. When cooker is totally cool then open a lid. Add tamarind, gud & stirred. & again put thd cooker in low flame.
  7. Make tadka heat oil add mustard seeds,curry leaves,asafoetida and pour in to sambhar
  8. Take a plate put idli in it & pour sambhar onto it. Serve hot.
