  2. 200 gm Kabuli chana- Soaked overnight with pinch of salt
  3. 4-5 black pepper kernels
  4. 1 cinnamon sticks
  5. 2 cardamom
  6. 2-3 cloves
  7. 1 bay leaf
  8. 1 tea bag
  9. 1/2 tsp baking soda
  10. 2 medium size onion finely chopped
  11. 1 large size tomato finely chopped
  12. 1 tsp ginger garlic paste
  13. 1-2 green chillies chopped
  14. 1/2 tsp coriander powder
  15. 1/2 tsp cumin powder
  16. 1 tsp kasmiri red chili powder
  17. 1/2 tsp turmeric powder
  18. 1/2 tsp raw mango powder
  19. 1 tsp chole masala powder
  20. 2 tbsp curd
  21. as required Coriander leaves finely chopped
  22. as per taste Salt
  23. as required Butter or oil for cooking
  24. For Butter Kulche:-
  25. 1 cup all-purpose flour
  26. 1/2 tsp baking powder
  27. 2 tbsp yoghurt
  28. 1 tsp sugar
  29. 2 tbsp ghee
  30. As required Few Nigella seeds (kalonji)
  31. As required Few sesame seeds
  32. as required Butter for frying
  33. as required Few finely chopped coriander leaves

Steps to make to make Amritsari Chole Butter Kulcha

  1. TO MAKE AMRITSARI CHOLE:- In a pressure cooker put soaked chole, whole spices, tea bag, salt, baking soda and water. Pressure cook the chole. Open lid and keep the chole aside. Don't throw away the water.keep it aside.
  2. In a pan heat 3 tbsp oil. Add chopped onion and green chillies, saute till it becomes golden brown. Now add ginger garlic paste saute for a minute and then add chopped tomatoes. Saute for a minute. when tomatoes softened add all spices and mix it well.
  3. Add curd and mix well. Now add boiled chole and chole masala mix it well and cook for 3-4 minutes.
  4. Now add reserved water which had keep it aside.cook for sometimes till the chole gets nicely cooked in the spicy gravy. Switch off the flame. Garnish with fresh fresh coriander leaves and ginger Julienne.
  5. TO MAKE BUTTER KULCHE:- In a mixing bowl add all-purpose flour, salt, sugar, baking powder, Nigella seeds, chopped coriander leaves mix it well and then add yoghurt, ghee and water. Start to knead and make a smooth soft dough. Cover it and let the dough ferment for 2 hrs.
  6. Make small balls of the dough. With rolling pin flatten the dough and make a oval shape small size kulcha. Sprinkle some sesame seeds and rolled it again.
  7. Heat a tawa, place kulcha on tawa. Cover it. Cook one side partly till it's 1/5 cooked. Flip and cook the other side till it's 1/2 cooked.
  8. Apply some butter on both sides of kulcha. Cook them till it gets golden spots.
  9. Serve them hot with prepared chole.
