  11. For White Batter

  14. 1/8 cup Spinach juice

  16. For Tadka
  17. 2 Tbsp oil
  18. 1 tsp mustard seeds
  19. 1/2 tsp asafoetida
  20. 3-4 green chillies slit
  21. 1 sprig curry leaves

Steps to make to make Tricolour Dhokla

  1. For Base - in a bowl add sooji and whisked yogurt and add sugar, salt and oil and whisk well, rest covered for 15 mins
  2. Divide into 3 parts the base
  3. For Saffron Batter - Add carrot juice to one part, baking soda and mix well, grease a baking tin and pour the saffron batter. In a karai add 1 cup water put a stand and add the baking tin, close and steam for 10 mins on medium flame
  4. For White Batter - Add baking soda and mix well, take the baking tin and gently pour the white batter on it, spread evenly and place it back to steam the same way as saffron batter on medium flame for 10 mins
  5. For Green Batter - Add spinach juice and baking soda. Mix well, gently pour into the baking tray over white steamed batter and place it back to steam the same way as white batter on medium flame for 10 mins, set aside and cool completely to demould
  6. For Tadka - in a wok heat oil, add mustard seeds and asafoetida, add green chillies and curry leaves. Stir once and pour on the Dhokla
  7. Cut a piece and plate, enjoy 😊
